Tomatoes, Potatoes, and Peanuts…Oh My!

 


Let’s get #cooking! 🤗 Now this is an exceptionally simple yet flavorful plant-based dish that can be eaten as is or as a side dish. Roast cherry tomatoes in olive oil with dried basil, and fresh chopped garlic in the oven until tomatoes are wrinkled. Then add previously roasted peanuts. I buy them blanched and raw and roast myself in batches. Lastly, add in quartered yellow potatoes. Return to oven until potatoes are done. 😋 



I added some shrimp to this for dinner, and am having a mixed green salad with avocado and honey balsamic on the side.
